Have used the "base gaskets" available from motorworks etc with great success over the last few years(on 1000cc motors from 78 to 83). Item 7 on the link below is actually a rubber "bump" stop which hardens with age. Quietened the topping out clunk down no end on a couple of my bikes -

Stock sizes are 3.25 x 19 front 4.00 x 18 rear. For period looking tyres either Continental RB2 & K112 or Metzeler Perfect ME 11 /77, both perfectly capable if not high mileage tyres.
